Simple Vegetarian Hippie Snack

Here is another awesome recipe I inherited from an amazing lady~ Amber Pollard







Pizza Crisps (unofficial name)







Ingredients:
Carr's Table Water Crackers with Cracked Pepper
Any Organic Hippie Tomato Sauce
Low-Fat Part Skim Shredded Mozzarella Cheese







Directions:
Preheat oven to 350 degrees. Place a desired amount of crackers on a non-stick cookie sheet. Next, carefully spoon sauce onto the center of each cracker and top with mozzarella cheese. Lastly, place in the oven for approximately 5 minutes. Remove from oven and enjoy!



Gourmet Sandwiches


Here is the amazing recipe handed down to me from my sister Dixie.

Ingredients:

Spread
2 Tbs Mayo
2 Tbs Sour Cream
1 Tsp Red Wine Vinegar
1/8 Tsp Garlic Powder
1/8 Tsp Basil
1 Tsp Deli Mustard

Cheddar Cheese Slices
Smoked Provolone Slices
Pastrami
Turkey
Banana Peppers
Spinach Leaves
Olive Oil
Cibata Bread



Directions:
First mix all ingredients for the spread and set aside. Then, preheat the oven to Broil and line a baking dish with tin foil. Next, coat the bottom of a large skillet with olive oil and place on medium heat. When the olive oil is heated, cut the cibata bread in half and lightly toast the bread (inside part down) in the olive oil. Right away put on the spread (both sides of the toasted cibata bread) and then place the meat on one side of the toasted bread. Next, on top of the meat put a slice of cheddar cheese. On the other side of the bread place one slice of the smoked provolone. Place bread (cheese side up in the baking dish with tin foil). Then, place the baking dish in the oven for about five minutes or until cheese begins to bubble and turn golden around the edges. Lastly, remove from oven and top with spinach leaves and banana peppers. Enjoy!

Spending My Days With Angels


Teaching is my passion, the hat I wear most often, the Art that fuels my existence... a true gift from God. Almost on a weekly basis I am humbly reminded just how blessed I am to spend my days amongst angels. Mostly, this wave of gratefulness washes over me unexpectedly and in the midst of a lesson and today during morning circle was no different... I smiled gratefully to myself as I silently thanked my God for the life he has given me. “The greatest sign of success for a teacher... is to be able to say, "The children are now working as if I did not exist." As my first year is coming to an end and my students are preparing for Kindergarten… I can’t help but tear up when I think about the progress my little ones have made. As sad as I might be to see them go I can’t help but feel overwhelmed with joy that they no longer need me.
